Autumn Breakfast - Apple Pancakes


Today feels like a perfect autumn day here in beautiful Massachusetts.  This apple pancake recipe was the perfect start this perfect day!  I found the idea an a blog called Lofty Appetite and was quite excited when I realized that we had all of the ingredients in the house already.  Within about 15 minutes of finding this recipe, I was in the kitchen peeling an apple (and I may have been doing a goofy excited dance about the prospect of making an autumn-esque meal).  It took about 20 minutes from start to finish to make these and they were super delicious!!  Here is how to make these amazing apple pancakes...




You will need:

The amount of each ingredient above will depend upon how many mouths you are going to feed!
For 2 servings, I would recommend using 2 apples & going by the instructions on the pancake box for the least amount of pancakes possible!  As for the butter, you will probably use about 2 tablespoons at the most (this is used to grease the pan & can be melted on the top of the finished product if you choose).  The cinnamon, sugar, syrup and powdered sugar are used to sprinkle & pour onto the finished product so this will all depend on your preference!



Step One:  Peel, Core & Slice up the apples (slice them to the width of a regular pancake - you don't want them to be too thin or too thick!!)
Step Two:  Prepare your pancake batter & add a little cinnamon
Step Three:  Place your pan on the stove, put it on medium heat and melt a small amount of butter in the pan
Step Four:  Dip each apple slice in the pancake batter & make sure you are getting a generous amount of batter on each apple slice
Step Five:  Place them in the pan and fry them up until they are gold and crispy


As for the toppings:


There they are - the finished product!  These are so incredibly easy to make and they were delicious. Such a perfect autumn breakfast idea!
